Hello, Low-Carb Fall Dinner! Trader Joe’s Now Has Butternut Squash Cauliflower Risotto

In what seems to be the outcome of a Trader Joe’s product name generator, the beloved grocery chain has begun selling riced cauliflower and butternut squash risotto. The cozy, seasonal dish is the latest item to come out of Trader Joe’s ongoing cauliflower craze, which arguably began with its wildly popular cauliflower pizza crust in 2017.

Though the name pretty much covers it all, the dish also consists of carrots, garlic, and cheese, all of which are glazed in an herbed butter sauce. As a heads up, because of its decidedly Fall flavors and ingredients, the riced cauliflower and butternut squash risotto will only be available for a limited time for $4 per each 16-ounce bag.
